Nothing says "Christmas" quite like gingerbread! These muffins are a delicious combination of your favorite spices like cinnamon, nutmeg, and cloves and are finished with a vanilla cream cheese glaze.
Yields: 5-6 large muffins
Ingredients:
Muffins:
1 cup of gluten free flour
1/2 cup of almond flour
3/4 cup of brown sugar, packed
1 1/2 teaspoon of baking powder
1/4 teaspoon of baking soda
1 teaspoons of ground cinnamon
1/2 teaspoon of ground cloves
1 teaspoon of ground ginger
1/2 teaspoon of ground nutmeg
1/2 teaspoon of salt
1/3 cup of 100% pure maple syrup
1/3 cup of molasses
1/2 cup of dairy free milk
1/4 cup of coconut oil, melted
Frosting:
8 ounces of dairy free cream cheese
1 1/4 cup of confectioners sugar
1 teaspoon of pure vanilla extract
Instructions
1) Preheat oven to 350 degrees.
2) Spray muffin pan with non-stick spray.
3) In a large bowl mix dry ingredients & stir.
4) In another bowl, mix all wet ingredients.
5) Combine both bowls and stir until well mixed.
6) Bake at 350 degrees for 20-25 minutes or until center is well formed. I use large muffin pans, so if you use smaller ones, you may need to cut down on the bake time.
7) While muffins are baking, mix frosting ingredients together with an electric mixer until well blended.
8) Scrape around muffins with a spatula, transfer to wire rack and let cool before serving.
9) Once muffins have cooled, top with frosting and sprinkle with a dash of cinnamon.
