These bars are unbelievably delicious and nutritious. Packed full of nuts, seeds, dried fruit and the super food powder of your choice!
Yields: 20 bars
Ingredients:
2/3 cup of sun butter or almond butter
1 cup of coconut oil
1 cup of honey
2 tablespoons of vanilla
1/2 cup of superfood powder
1/2 cup of peanut butter powder
1 teaspoon of salt
4 cups of old fashioned oats
1 cup of shredded unsweetened coconut
1/4 cup of chia seeds
1/2 cup of pumpkin seeds
1 cup of dried cranberries or raisins
Instructions
1) In a large bowl mix wet ingredients.
2) In another bowl mix dry ingredients.
3) Combine bowls and stir until evenly mixed.
4) Spread mixture into greased or lined pan.
5) Place wax paper or plastic wrap on top and press firmly to form bars.
6) Let harden some in refrigerator (approx. 15 minutes) then cut into small bars.
7) Store in a cool dry place. I like to individually wrap mine and store in the refrigerator for an easy on the go snack.
