GF-DF Maple Bacon & Brussels Pasta

A sweet and salty pasta dish smothered with brussels sprouts, crumbled bacon & apple chicken sausage.


Yields: 2 servings


Ingredients:

1 lb of brussels sprouts

1/4 cup of crumbled nitrate free bacon (4-5 strips)

2-3 links of apple chicken sausage

2 tablespoons of olive oil

1 1/2 tablespoons of maple syrup

2 cloves of garlic

1/2-3/4 box of gluten free pasta

salt

pepper


Instructions

1) Preheat oven to 400.

2) Wash and cut brussels sprouts into quarters.

3) Place brussels sprouts on baking sheet with a drizzle of oil & a pinch of salt & pepper.

4) Roast for 20 minutes, stiring half way in between.

5) In a large pan cook bacon and drain grease.

6) Boil water & a pinch of salt. Once boiling add pasta & continue to boil for 8 minutes or until el dente.

7) Mince garlic, slice apple chicken sausage & crumble bacon.

8) Remove brussels sprouts from pan & top with bacon, apple chicken sausage & garlic.

9) Add 1 tablespoon of oil and 1 tablespoon of maple syrup & stir.

10) Roast for 5 more minutes or until fragrant & sausage has browned a bit.

11) Strain pasta and add 1/2 tablespoon of maple syrup and 1/2 tablespoon of oil & mix.

12) Divide pasta between plates and top with roasted mixture.

13) Season with additional salt and pepper to taste.


*Optional-If not following a dairy free diet, sprinkle with Parmesan.
