GF-DF Perfect Peanut Butter Cup Cookies

A healthier version of peanut butter cookies perfectly paired with dark chocolate peanut butter cups.

Yields: a dozen


2/3 cup of coconut flour

1/2 cup of sugar

1/2 cup of packed brown sugar

1/2 teaspoon of salt

3/4 teaspoon of baking soda

1/2 teaspoon of baking powder

3-4 peanut butter cups or 6 bite size (I used Justin's)

1/2 cup of peanut butter

1/2 cup of coconut oil


1) Preheat oven to 375.

2) Mix wet ingredients.

3) Mix dry ingredients.

4) Chop peanut butter cups and fold in.

5) Roll dough into 1 1/4" balls.

6) Place balls 2" apart on ungreased cookie sheet/s.

7) Flatten in crisscross pattern with fork.

8) Bake for 8-10 minutes or until desired doneness.

9) Transfer to wire rack & let cool before serving.
