This pizza is easy, healthy and delish! It's smothered with grilled chicken, bacon, cheddar, onion, tomato and avocado.
Yields: 8-10 slices
Ingredients:
3 cups of gluten free flour (I used Bob's Red Mill Gluten Free All Purpose Baking Flour)
2 1/4 teaspoons of yeast
1 teaspoon of salt
3 tablespoons of olive oil
1-2 chicken breasts
1/2 cup of crumbles bacon (approx. 4-5 slices)
1/2 onion
1 tomato
1 avocado
1-2 cups of cheddar cheese (I used Daiya Cheddar Style Shreds.)
Instructions:
Dough
1) Mix 1 cup of flour with salt
2) Add 3 tablespoons to 1 cup of very warm water (120-130 degrees)
3) Beat with electric mixer or stir quickly for 2-3 minutes, scraping the bowl frequently.
4) Add 1/1/2-2 cups of flour until dough is soft and leaves side of bowl.
5) Let rise for an hour or so.
Topping
1) Bake or grill chicken until cooked.
2) Dice into small pieces and set aside.
3) Cook bacon and crumble.
4) Dice onion, tomato, and avocado and set aside.
Pizza
1) Preheat oven to 375 degrees.
2) Grease a pizza pan.
3) Place dough on pan and flatten until it is spread out evenly and fills the pan.
4) Drizzle with olive oil and top with cheddar, chicken, and bacon.
5) Bake for 20-25 minutes or until crust in lightly browned.
6) Remove from oven and evenly spread topping on top.
7) Let cool, slice, and enjoy!
